When it’s just too hot to cook, and you want a side salad that is refreshing, this is a great go to. Fresh and zesty, this is the perfect accompaniment to grilled fish, or maybe just some smoked salmon or gravlax.
And that reminds me I should do a post on gravlax! There’s a really good one that a friend put us on to, that you won’t be able to resist.
But back to this salad. Fresh and zesty, you can prepare ahead and keep in the fridge in a couple of separate containers and then throw together in 30 seconds. I keep the onions and chilli in one container, the peaches and lime segments in another, and the juice and zest in yet another. Only 3 small containers, but everything stays nice and fresh for your barbeque or picnic.
Peach Salad

Ingredients
- 4 Peaches, cut into 1/8s
- Zest of 1 lime
- Juice of same lime
- 1 lime, segmented
- 1/2 Red onion, sliced
- 1 Tbs Olive oil
- 1 Chilli
